Real Italian ricotta is quite different from that found on UK supermarket shelves. This Piedmont ricotta is made using cow and sheep’s milk and cream and is incredibly fresh, so it only lasts a couple of days. The texture is smooth and creamy with a delicate and slightly sweet, milky flavour. Seirass comes from the word ‘serum’, meaning ‘whey’ in Latin and in the Piedmont region means ricotta. Traditionally it is presented in a fabric cone bag and retains its shape when turned out. Seirass ricotta is delicious in sweet or savoury dishes and pairs beautifully with a light honey. Try stirring through pasta, stuffing it into courgette flowers or using in a dessert alongside a sweet white wine.
